American Flag Tres Leches Cake

It's the fourth of July and I’m baking something festive and delicious that I can’t wait to share. A Tres Leches Flag Cake is on the menu for this weekend.

It is my first time making it and I’m curious to see how it will come out but all the ingredients are pretty basic and the recipe is easy to follow, so I’m feeling confident about the end result. The only thing that will be questionable are my American flag decorating skills.

I can’t believe it’s July 4th already and that just proves how fast time goes, especially when summer rolls around. It’s such a time sensitive season for us here in New York, since our warmer months don’t last as long as our colder months. We want to enjoy as much as we can and with all the yummy desserts to follow too.

Let’s jump right in!

Ingredients:

Cake Recipe:

7 eggs

1 ½ cup of sugar

1 ½ cup of flour

½ cup of vegetable oil

3 teaspoons of baking powder

1 tablespoon of vanilla

Milk Mixture:

12oz evaporated milk

9oz sweetened condensed milk

⅓ cup of heavy whipping cream

½ teaspoon of cinnamon

Frosting:

1 cups of heavy cream

2 tbsp of granulated sugar

1 cup of blueberries and 1 cup of sliced strawberries

How to:

1. Preheat the oven to 350 degrees and butter a 9 x 13 baking pan.

2. Beat the eggs first, while beating the eggs add the sugar, oil, baking powder and vanilla. Beat the flour last.

3. Pour the batter into the buttered baking pan and place in the oven for 30 minutes. Once the cake is done baking, let it cool for about an hour and then add the three milk mixture.

4. In a medium size bowl add all three milk mixtures and add the cinnamon. Let the cake soak for at least four hours or let it stay overnight. The longer it absorbs the milk mixture the more moist it will be. Make sure to keep it in the refrigerator.

5. After the cake has soaked, In a large bowl add the frosting ingredients and beat on high for 1 minute to 1 minute and a half. Until peaks form.

6. Spread over the cake and add the sliced strawberries and the blueberries

This recipe was actually quite easy to make and with easy to find ingredients that you can grab in any supermarket or grocery store. I came across a few recipes that offered a different take. It mostly came down to the part with the milks. Some heated the milk before pouring, some suggested milk instead of heavy cream, adding a cinnamon stick to the mixture. But I decided to offer my own alternative and hope you guys like it as much as I did. Let me know what you think of this recipe! I’m looking forward to making this recipe again for memorial day, one last hurrah for the season.

If you are gluten-free, this can easily be made with King Arthur’s Measure to Measure Gluten Free Flour Blend, just swap out the all purpose flour for the GF flour and follow the rest of the recipe.

Have a happy fourth!
