Pecan Crescent Cookies
I’ve been making these cookies for years and they never go out of style and are always one of the first cookies to disappear.
Simple and buttery is the best way to describe these delicious holiday cookies. Although they can be made anytime of year, they always seem to perfectly accent the gingerbread cookies and sugar cookies they are always nestled in between.
Ingredients:
1 cup of butter, softened
½ cup confectioners sugar
2 teaspoons of vanilla
1 cup of finely chopped pecans
1 ¾ cups of flour
About ½ cup of confectioners sugar (to roll the cookies in)
How to:
Cream butter, confectioners sugar and vanilla until light and fluffy
Stir in chopped pecans
Gradually stir in flour until well blended
Cover and chill for one hour in refrigerator or firm enough to handle
Divide dough in eight equal sections
On a lightly floured surface take a small piece of section and roll into crescent shape 1/2inch wide and 3 inches in length
Place 1inch apart on ungreased baking sheets or parchment lined baking sheets
Bake in preheated oven at 300 degree for 18 to 20 minutes or until golden brown and firm to touch
While still warm roll cookies in confectioner sugar
